This wine feels as though it was made out of instinct, that's a good thing by the way, a really good thing. Now it goes without saying that a lot of hard work and plenty of know-how goes into creating gorgeous white wines like this, but we're talking about how this one feels, and, In a word, it feels effortless. A clean, versatile, and ultimately generous wine with racy acid and a structured, textural finish. We're saving a bottle to have with prawn pasta but something tells us this little number could handle anything from a curry to a full-blown Mexican feast. Nachos mightn't have been what the Italian winemakers had in mind, but it's your party, you can eat nachos if you want to.

If you head over to Central Wairau in Marlborough, you’ll find the idyllic Caythorpe Family Estate. Its vineyard sits over light silt and alluvial gravels, enjoying longs days of summer sun and cool autumn nights. This is kiwi Gris to a tee (that's fun to say out loud) - apricots and ripe peach with a thin but pointy acid line giving freshness and laser like focus to the wine. Citrusy, melony, delicious-y – a friendly, approachable, anytime white that's uber-moreish. Fare warning though, my tasting bottle seemed to evaporate quite quickly...

To say this wine is a firecracker with those beautiful flinty notes wafting from the glass would be just the beginning. The real fire-cracking moment for this wine comes from the zesty, focused and tense acidity that drives right across your palate while oozing layers of fresh apple, pears, citrus and grapefruit. Gorgeous top notes of white flowers also draw you in complimented with beautiful French oak. A magnificent rendition from a region hitting new heights time and time again.

We could ramble on for days and days about why we love chardonnay, especially the wines coming out of Margaret River but here it's the finer details that get us (and the critics) excited and ticking all of the boxes. Coming in at 12.5% and with those cool breezes of the region you just know this is going to be a lighter, more refreshing style of chardy with loads of acidity that will get us coming back for more and more. Delving deeper, the use of new and old oak with stirring of the wine during fermentation gets us salivating with layers of complexity popping out of the glass and on the palate. Finally, barrel selections has ensured only the most balanced, complex and complete wine is bottled.

Founded in 1950 and now with Robert Goully's grandson Frederic at the helm, their wines are entrenched in experience and knowledge of the terroir, which has been passed down from generation to generation. The nose is aromatic, with notes of crunchy peach, apple and yellow fruit. The well-balanced palate is both fruity and fresh while maintaining structure and definition to the lively acidity. Notes of fresh peach are joined by nectarines, pear and mirabelle plums with subtle hints of quince, butter and toasted characteristics.

Fresh off the port of New Zealand, Middle Earth is one of our favourite wineries from the south island. We only ever get a limited amount because they don’t make much wine - it’s pretty exclusive. Refreshingly crisp and brimming with sweet luscious honey character, lemon, dragonfruit and quince, this is mouth-filling and textured, piercing the palate with firm acidity and minerality. This is perfect for the humid weather served super chilled; it just slips and slides. Destined to be consumed with your favourite hawker dishes, this wine will happily take the heat off your chilli crab or balance alongside the tamarind sweetness of rojak.
